Deviled Eggs

INGREDIENTS

  • 12 eggs
  • 1 liter 4 cups water
  • 500 ml / 2 cups mayonaise
  • 1 tbsp PitmasterX’s Chicken Rub
  • 1 chili pepper
  • 150 grams / 5.3 oz pickled jalapeno’s
  • 50 grams / 1.8 oz Parmesan cheese
  • 1 star anise
  • 3 cloves
  • 2 tbsp chili flakes
  • 1 clove of garlic
  • 1 stick of cinnamon

INSTRUCTIONS

  1. Fire up your woodfire grill or other type of fire pit to create a layer of hot embers.
  2. Hard boil 12 eggs in a dutch oven with cooking water above the fire.
  3. Let the eggs cool down in a bowl with cold water.
  4. Peel the eggs and slice them in half. then, with a spoon take out the hard boiled egg yoke. Keep the egg white on the side!
  5. Put the egg yoke in a zip lock bag and set it aside.
  6. Remove the water from the dutch oven and let it dry.
  7. Place a small amount of embers from your wood fire on the side in your dutch oven and sprinkle on a tiny bit of smoke wood.
  8. Place all the egg white half’s in the pan once the smoke is twirling up and close the lit. Let it smoke for around 20 minutes.
  9. Open up the zip lock bag with the egg yoke’s and add an equal amount of mayonaise. With 12 eggs that is about 500 ml or 2 cups of mayonaise.
  10. Add 1 tbsp of PitmasterX’s Chicken Rub to the egg yoke’s.
  11. Chop fine ⅓ red chili pepper and 150 grams or 5.3 oz of pickled jalapeno’s. Add both to the egg yoke’s along with 50 grams or 1.8 oz of grated Parmesan cheese .
  12. Mix it up, squeeze it fine and cut off a corner with your knife.
  13. Take out the now smoked egg whites and fill it up with egg yoke mixture.
  14. Put a cast iron skillet over de wood fire and let it warm up with 2 tbsp of peanut oil.
  15. Add 1 star anise, 3 cloves , 2 tbsp of chili flakes, 1 clove of garlic and a stick of cinnamon.
  16. Let the ingredients fry slowly above the fire.
  17. Carefully drip a couple of drops on top of each deviled egg to give them an extra spicy kick.
  18. Grate fine some extra optional Parmesan Cheese on top and they are done.
